Almost Asian Salad

This quick and easy spinach salad with fruit, veggie, and carb toppings is simple enough so that you could make it any weeknight, but it has a touch of elegance which makes it suitable for an opening course of a fancier dinner.

  • Servings: 6
  • Prep Time: 10 minutes
  • Cook Time: none
  • Total Time: 10 minutes

Ingredients:

1× 16-oz pkg Ready-to-eat Baby Spinach
1× 8-oz can Mandarin Orange Slices, drained
1 Small Grapefruit, peeled and sliced
½ – ⅔ Avocado, roughly sliced into thin triangles
2 Small Green Onions, white and green parts, sliced
1 Heaping Cup Chow Mein Noodles

Directions:

1. Fill 6 portion-size salad bowls halfway with spinach.

2. In each bowl, near the outside edge, around the whole circumference of the salad, alternate slices of orange and grapefruit, in a sort of pinwheel fashion.

3. In each bowl, closer to the middle of the bowl, make a ring of avocado slices.

4. Toss some green onion slices in each bowl.

5. In each bowl, place a small handful of chow mein noodles mostly in the middle of the salad.

This salad goes well with any dressing that fetures sesame, ginger, or peanut. It also goes well with a simple balasmic dressing, fruit-flavored vinaigrette, or sweet-and-sour dessing.
