Chocolate Kahlua Cheesecake

Ingredients:
| Crust: | |
| 2 cup | Chocolate Wafer Crumbs |
| ¼ cup | Melted Butter |
| Filling: | |
| ¾ cup | Semi-sweet or Dark Chocolate Chips, melted |
| ¼ cup | Heavy Cream |
| ¼ cup | Kahlua |
| 32 oz | Cream Cheese, softened |
| 1 cup | Sugar |
| ⅓ cup | Cocoa Powder |
| 4 | Eggs |
| 1 tsp | Vanilla |
| Ganache: | |
| 1 cup | Semi-sweet or Dark Chocolate Chips, melted |
| ¼ cup | Heavy Cream |
| 2 tsp | Kahlua |
Directions:
Heat oven to 325º
Prepare Crust: Mix chocolate wafer crumbs and melted butter. Press into bottom of a 9" springform pan.
For Filling: beat cream cheese and sugar with an electric mixer until fluffy. Add remaining filling ingredients one at a time to make sure its thoroughly mixed. Scrape down the sides of the bowl too.
Pour filling into prepared crust and bake for about 40-50 minutes, or until filling is set (only just slightly wobbly). you might need to add more time - better to check on it early than over bake it! .
Let cake cool, then stir together the ganache ingredients and pour on top of the cake.
Refrigerate at least 6 hours before unmolding pan and serving. Garnish with whipped cream.
