Banana bread with English walnuts

  • Total Time: 50 minutes

Ingredients:

Dry Ingredients
2½ cup Gluten Free Flour*
+ 1 Tsp Xanthan Gum
1½ tsp Baking Soda
2 tsp Cinnamon
⅛ tsp Cardomom
1¼ cups Evaporated Cane Juice
¼ cup Rice (or Oat) Bran
Wet Ingredients
2 tsp Banana Extract
1 Egg
3 Large Ripe Bananas
⅓ cup Non-fat Greek Yogurt
Nuts
½ cup Finely Chopped Walnuts

Directions:

Preheat the oven to 350 degrees F

Spray 4 small loaf pans (mini) with a spray like PAM

Sift all of the dry ingredients together and set aside

Whisk the egg. Mash bananas, add the yogurt,egg and banana extract and mix with hand mixer about ten (10) seconds.

Blend in the dry ingredients until combined. Do not overmix. Stir in the nuts.

Divide the batter between the four pans.

Bake until browned, approximately 25 minutes for small pans. Toothpick inserted in center should be clean. Cool for no longer than 3 minutes in pan. Turn out onto a wire rack to finish cooling.

After cooling, slice with an electric knife for best results for evenly cut slices.

Note: * flour mix used contains sweet rice flour, sorghum flour, cornstarch and tapioca starch.
