Okay here is my recipe for the Mini Turtles:
I use a basic cheesecake recipe and bake in mini pans, they are called lift and serve pans.Chicago Metalic makes them. I put in a crust and then pour the batter 3/4 full into the pan and bake. Any basic cheesecake recipe will do. Then it is all about the toppings!!!!
Really you can add almost anything to a basic batter. For my turtle cheesecakes I add caramel to the base. I bake it in a oreo cookie crust then top it with a milk chocolate ganache, pecans and drizzle with more caramel. If I don't use the oreo crust I'll use a vanilla wafer and crushed pecan crust.
I like to think of mini cheesecakes like chocolate truffles I'll put 4 or 6 in a box and tie them up with a bow. :-) Happy Holiday Baking!!!!
Crust: Oreo Cookies Whole & Chilled Butter cut into table spoons pulse together in a food processor till they are crumbly crums that will stick together when pressed on with the back of a spoon.
Crust: Vanilla Wafer Crust & Chilled Butter Same as above for Oreo Crust only I use Vanilla Wafer Cookies. For variety I add Pecans and pluse the cookies, nuts and butter together till it forms the consistancy I am looking for.
