Pickled Vegetable Medley

I love the flavor of all the vegetables in this dish. They make a great accompaniment to any meal. This will take you some time to prepare, but is so worth the wait. A few of the people that love this recipe cannot seem to deal with the small seeds due to a medical reason, I will place them in a tea ball or cheese cloth and take them out later, once their flavor has been added.

  • Servings: 6-8 pints
  • Prep Time: 20 minutes
  • Cook Time: 10-15 minutes
  • Total Time: 40-45 minutes

Ingredients:

2 cups Peeled, sliced or baby carrots
2 cups sliced Celery
2 cups sliced White Onions, or pearl
1 Large Red Bell Pepper, cut into strips
1 Large Green Bell Pepper, cut into strips
3 cups Broccoli Florets
3 cups Cauliflower Florets
1 (14 Oz.) Jar Sweet Pickles,drained
6½ cups White Vinegar
2 cups White Sugar
3 Tbsp Yellow Mustard Seeds
1 Tbsp Celery Seeds
2 tsp Turmeric
If You Want More Heat To Your Pickle, just add your favorite peppers to the mix.

Directions:

After chopping and cutting all vegetables, place all ingredients into a large pot. Bring to a boil, reduce heat and simmer for about 5 minutes, stirring often. Remove from heat,place into jars, leaving 1/2-inch head space. Adjust liquid and seal.
