Sweet Spinach Salad

Vince's is a great Italian place. When I saw this on the menu,I just had to try it. Loved it so much went home a wrote down all the ingredients. This is my take on that salad. I make it about once a week with all the fresh fruit now available at the farmers market.

Ingredients:

1-bag Baby Spinach
1-1½-cups Cantaloupe-cut In Bite Size Pieces
2 Fresh Peaches-peeled & Sliced, can use thawed frozen or drained canned
1-can Mandarin Oranges-drained
½-¾-cup Raisins or Currents
½-1 cup English Walnuts-roughly Chopped
This Is What Was In The Salad.
But Have Added, at times fresh raspberries or sliced strawberries.

Dressings
Raspberry Poppyseed Vinaigrette-makes About 3/4 Cup
½-cup Reduced Sugar Raspberry Preserves
2 Tbls-olive Oil
¼-tsp Pepper
½-tsp Salt
1-tsp Poppy Seeds
Combine All But Poppy Seeds.whisk or Process In Blender Till Smooth. Stir In Poppy Seeds.
Cover & Chill.
Will Keep Up To a Week In Refrigerator.

Honey Lime Dressing.
Makes About 1 Cup.
4 Tbls Honey
2 Tbls Frozen Limeade Concentrate
2 Tbls Canola Oil
1-tsp Lime Zest
Pinch of Dry Mustard
Combine All In Jar With Tight Fitting Lid,shake Til Well Mixed.
Use, at once,does not keep well because of the honey.

Directions:

Pick through spinach,cut any tough stems. Place spinach on large platter, top with fruit. Sprinkle with nuts and raisins. Serve with dressing on side.
