This tastes just like the fried ice-cream I usually get at Mexican restaurants, but this one is so much easier to make! I got this recipe from a cook named Donna Sherwood. The photo is my own.

  • Servings: 6
  • Prep Time: 20 minutes
  • Cook Time: 8 minutes
  • Total Time: 28 minutes

Ingredients:

¼ cup Butter or Margarine-melted
6 (7") Tortillas
6 Tbls. Sugar
½ tsp Cinnamon Powder
Your Favorite Ice-cream
½ cup Corn Flakes
Chocolate Syrup
Honey
Whipped Cream
6 Maraschino Cherries

Directions:

Brush butter on one side of tortillas.

Combine sugar and cinnamon. Sprinkle over buttered side of tortillas.

Press each tortilla (butter side down) into muffin tin.

Bake at 400* for 6-8 minutes.

Cool for 5 minutes.

Gently remove baked tortillas from muffin tin.

Place a scoop of ice-cream in each tortilla.

Sprinkle with corn flakes, and drizzle with syrup and honey.

Top with whipped cream and a cherry.

Serve cold.
